leafy Greens Apple & Fig Salad wITH aVOCADO DRESSING
INGREDIENTS
8-10 cups raw leafy greens (rocket, spinach, lettuce, watercress, land cress)
1-2 apples, thinly sliced
½ a red onion, thinly sliced
1 spring onion, finely chopped
½ a cucumber, spiralised or cut into half moons
6 dried figs, thinly sliced (or 3 fresh)
1 large radish (or 6 baby radishes), thinly sliced
Handful of fresh coriander, with the sprigs
FOR THE DRESSING
1 sml/med avocado
1 tsp raw honey
½ a lemon, squeezed
½ an orange, squeezed
1 clove of garlic
METHOD
Place the leafy greens in a large salad bowl, adding all the other ingredients on top.
Blend together the salad ingredients using a high speed blender and pour over the salad, gently mixing it through.
Serve immediately and enjoy! This salad is delicious served with steamed baby potatoes.
