Raw avocado lime tarts

Being the closest food on this planet to breast milk, avocados are all about nurturing. From the brain to the gut, to the heart, to the soul, avocados are truly the mother of all healing foods.

Raw avocado lime tarts recipe

FOR THE BASE

3/4 cup coconut chips

1/4 cup pumpkin seeds

3/4 cup dates

1 Tbsp chaga powder (optional)

1 Tbsp maple syrup (optional, depending on how gooey your medjools are!)

Pinch of sea salt


FOR THE FILLING

2 small/medium avocados

1/4 cup raw honey

1/4 cup lime juice

2 Tbsp canned coconut milk (or 1 Tbsp coconut butter)


METHOD

To make the base, add the coconut chips, pumpkin seeds, chaga (if using) and salt to the food processor. Pulse to a fine crumb. Then add the dates a little a time until the mixture comes together. If needed, add 1 tablespoon or less of maple syrup.

Place 6 muffin cases in a muffin tray and divide your mixture into 6 equal parts. Press the mixture into the cases, including up the sides. Place the tray in the freezer for 15 minutes.

To make the filling, add all the ingredients to a high speed blender and whizz, or simply use a hand blender. Fill each case with the filling and sprinkle with a little desiccated coconut.

Place the tray in the freezer for a couple of hours. Remove 15 minutes before serving.
