Carrot & Coriander Soup

This is soup is deeply soothing and warming, bringing a smile to the belly.

SERVES 4

INGREDIENTS

1 onion, diced

2 cloves garlic, crushed

1 small to medium leek, sliced

1.5 teaspoons of ground coriander

1 teaspoon ground cumin

1/2 teaspoon ground cardamom

1 sweet potato, peeled and diced

4 cups (450g) carrots, peeled and sliced

3/4 cup (40g) fresh coriander

750ml of healing broth / veg stock

250ml unsweetened almond milk (optional)

METHOD

Add the onions and leeks to a saucepan with a little of the healing broth and sauté until soft, adding more broth as needed. Then add the garlic and spices, sautéing for a few minutes more.

Add the sweet potato and carrots, coating them well in the onion, leeks and spice mixture before adding the remaining healing broth. Bring to the boil then turn down to a simmer for 12-15 minutes.

Turn off the heat and transfer to a high speed blender, blending until smooth. Add the fresh coriander and blend again, so that it only just incorporates.

Add salt and pepper to taste, followed by the almond milk or more healing broth to get just the right consistency and creaminess for you!
