Cucumber noodles with crushed avocado and basil recipe

Cucumbers are rejuvinators on every level. They calm and cool a fiery mood, bring down fevers, cool over used organs such as the adrenals and liver, and hydrate the body right down to the cells. They also make wonderful spaghetti, perfect for a warm summer’s day.

SERVES 2

Cucumber noodles crushed avocado basil recipe

INGREDIENTS 

1 cucumber, spiralised 

1 large avocado

1 clove garlic, minced  

Squeeze lemon juice 

¼ teaspoon of sea salt 

Small handful of basil 

1 sheet of nori, torn into pieces 

Sprinkle of nigella seeds (optional)

METHOD

Spiralise the cucumber and set aside in a large bowl.

Put the avocado, minced garlic and chopped basil in a bowl and crush with a fork. Add sea salt and lemon.

Spoon the avocado over the cucumber noodles along with the nori pieces and gently mix through, using the fork.

Sprinkle with nigella seeds and an extra squeeze of lemon and serve!
